Vegetable Biryani (working recipe) For the rice: 1 c basmati rice 1 t sesame oil 2 t olive oil 1 3/4 c water For the vegetables: 2 T Butter, bacon fat, lard, oil ... 1 lbs potatoes 1/2 t large grain salt 1 T Olive oil 1 t sesame oil 1 medium onion 1/8 inch slices, cut in 1/8ths 1 t garam masala 1/4 t cayenne pepper 2 cloves garlic, minced 1 red paper, diced 1 c frozen peas 3 T oyster sauce 1 T soy sauce Slice peeled potatoes 3/8" thick. Fry in a skillet with fat and salt until brown and done, about 20 minutes turning about every 5 minutes. cut into bite sized pieces and set aside. Meanwhile cook the rice ~ 20 minutes until water is absorbed. Saute onion, garam masaaml, and cayenne pepper 5 minutes. Add garlic and red pepper and saute another 3 minutes. stir in peas, potato, oyster sauce and soy sauce and cover 4 minutes or until peas are ready. Stir in rice until everything is mixed and heated through.
