Scrambled Eggs with Corn Chips I had a taste for Fried Matzo one day. Didn’t have matzo. Had corn chips. The result has become a staple. 1 small to medium onion, diced 1 T olive oil or butter 4-6 eggs 2-3 T water 1/4 t table salt 1 T dried parsley flakes 1/4 t dried oregano 1/4 t ground black pepper 1/4 t ground cayenne pepper 2-3 large handfuls of corn tortilla chips Procedure: Sauté onion in oil or butter in a large skillet on low to medium. While onion is cooking mix remaining ingredients except corn chips in a large bowl with a fork. When is turning transparent taste for desired doneness. I like some crispness and raw taste but done enough to be acceptable to those that don’t like raw onions. When onions are ready scrape them into the egg mixture to arrest their cooking. Add corn chips and turn mixture with the fork to coat the chips. Dump back into the skillet and proceed like scrambled eggs, scraping the bottom and turning the eggs 3 to 5 times in as many minutes on low to medium.
