Pepperoni Pizza 1/3 of 4 cup pizza dough recipe cornmeal for dusting peel olive oil for brushing the stretched dough 1/2 cup Quick tomato sauce for pizza 2 1/2 oz thin sliced pepperoni 1 1/2 oz shredded mozzarella (1/3 cup) 1-2 T grated Parmesan cheese Place Pizza stone on rack in lower third of the oven. Heat oven to 500F for at least 30 minutes. turn dough onto a floured work surface and let relax 10 to 30 minutes. Press and stretch into 12" round letting rest again if dough resists. Transfer to the cornmeal dusted peel. Lightly brush dough with olive oil. Spread tomato sauce leaving 1/2" edge uncovered. Scatter pepperoni. Slide pizza onto heated stone. Bake until crust edge starts to brown, ~6 to 12 minutes. Sprinkle on Mozzarella and Parmesan cheese and bake until cheese melt, ~2 to 3 minutes
