Lentil Soup INGREDIENTS 1 cup lentils (7 oz) 1/2 onion, chopped 2 tablespoons olive oil 1/2 teaspoon ground cumin 1/4 teaspoon ground black pepper 1 T beef soup base DIRECTIONS Place lentils into a pressure cooker, and cover with about 1 inch of water. Add onion, cumin and oil, cook for 10 minutes and then turn off heat and let set for 10 minutes. Season with pepper and serve. Serves 2 =================================================== Lentil Soup - enhanced INGREDIENTS 1 cup lentils (7 oz) 1/2 onion, chopped 2 tablespoons olive oil 1 teaspoon ground cumin 1/4 teaspoon ground black pepper 1 T beef soup base 1 14 oz can of small red beans with liquid 1 14 oz can diced tomatos with liquid capcicum pepper powder or sauce to taste DIRECTIONS Place lentils into a pressure cooker, and cover with about 3/4 inch of water. Add everything else and cook for 10 minutes and then turn off heat and let set for 10 minutes. Partially puree with hand blender if desired. Season with salt and pepper and serve as soup or over rice.
