Fresh Herb and Parmesan Frittata

1 T	olive oil
1 small onion diced
1/2 red pepper diced
2 T minced fresh herb leaves e.g. parsley,basil,tarragon or mint
1 c canned corn or frozen peas
1/3-1/2 c grated Parmesan
1/4 t salt
1/4 t pepper
6 large eggs

Adjust oven rack to the upper middle position and preheat to 350

Saute onions and pepper in oil 3-4 minutes in a 8 or 10 inch cast iron skillet t medium heat.

Beat eggs Parmesan, salt and pepper with fork in a bowl.

Add herbs, and corn or peas to skillet and heat through

Add egg mixture to skillet and stir everything together and let cook until the bottom 2/3 is set.

Place in oven until the top is firm when tipped.
