Fried Chicken - Prince's hot chicken Brine: 2 quarts water 1/2 c table salt 1/2 c sugar 1/2 c hot sauce 1/4 chicken: cut out spine score breast bone cartilage with knife and crack breast bone in half remove leg quarters cut breast in half along breast bone Brine chicken 1 hour in refrigerator Sauce: 3 T vegetable oil 1/2 t paprika 1/2 t table salt 1/2 t sugar 1/4 t garlic powder 1 - 3 1/2 T cayenne heat oil in pan until it shimmers mix dry ingredients and cook in oil 30 seconds and cool breading: mix together 2 c all purpose flour 1/2 t black pepper 1/2 t salt Dredge chicken in flour mixture and place it on a cooling rack while oil heats to 350 Re-dredge chicken fry 2 pieces at a time letting the temperature drop to 300 - 325 about 20 minutes until chicken is 160 put chicken on a rack over a sheet pan and put in 200 oven while remaining chicken cooks When chicken is done brush spice/oil mixture all over chicken Serve on white bread with pickle slices
