Key lime pie 1 cooked 9 or 10" pie crust 9" 1 1/2 c water 1 1/2 c sugar 6 T cornstarch 3 egg yolks 1/2 c key lime juice 10" 1 3/4 c water 1 3/4 c sugar 8 T cornstarch 4 egg yolks 3/4 c key lime juice Boil water with sugar, remove from heat. Add cornstarch to key lime juice and mix well. Add and stir egg yolks in one at a time. Return pot to heat and slowly add key lime mixture to water mixture. Heat just to boil, stirring constantly and making sure cornstarch does not stick to bottom. Pour into pie shell. Top with meringue immediately and bake in 325 oven 20-25 minutes. Meringue 3 egg whites (4) 1/4 t cream of tarter (1/4 + pinch) 6 T sugar (8 T) Beat egg whites with cream of tarter to soft peak stage. Add sugar 2 T at a time and continue beating to stiff peak stage.
